At its root is the Gozenhonsō, a royal medical text in which the last Ryukyuan king's physician catalogued the healing properties of local ingredients. Its wisdom filtered beyond the palace walls to become the foundation of a food culture that researchers and filmmakers, a tradition that continues to attract the attention of researchers and filmmakers today, including the team behind Netflix’s Live to 100. The chef who leads this experience, a former hospital dietitian turned medicinal cuisine specialist, discovered the Gozenhonsō and recognized in it the principles of modern nutritional science, expressed centuries earlier, in the language of Ryukyuan court cooking.

The workshop begins with a brief constitution assessment, helping each guest understand which ingredients will best serve them that day.

Guests then prepare court-inspired dishes together using local seasonal ingredients, before sitting down to a relaxed lunch where every dish carries a story — of the kingdom that created it, the royal physician who first documented its healing principle, and the chef who brought it back to life. A former hospital dietitian and medicinal cuisine specialist, she spent eleven years in clinical nutrition before discovering the Gozenhonsō — the royal Ryukyuan food-medicine text — and recognizing in its centuries-old wisdom the principles of modern nutritional science. She is now widely regarded as the foremost living practitioner of Ryukyuan court medicinal cuisine, and her work has attracted the attention of Netflix documentary filmmakers and BBC journalists examining Okinawa's extraordinary longevity culture.
